Chickpea Tomato Pasta


This is one of my go-to dinner recipes just because it's so simple and I always have the ingredients handy! If you're looking for an absolutely delicious, nourishing and satisfying recipe with minimal ingredients, keep reading and thank me later...


Ingredients (serves 1):

↝ 100g pasta, dry (I used brown rice pasta as it is very high in protein)

↝ 1/2 can black or normal chickpeas, drained

↝ 2 handfuls spinach

↝ 1/2 clove garlic

↝ 1 tsp oregano

↝ 1/2 can chopped tomatoes

↝ a few basil leaves


Method:

First, cook the pasta according to the instructions.


Finely chop the basil leaves and the garlic and add them to a pan with the spinach, oregano and tomatoes.


Once the spinach leaves have begun wilting, add in the chickpeas and cook everything on medium heat.


Drain the pasta when cooked and add it to the stew, serve and enjoy!
