Avocado Pesto Pasta (Oil-Free)

This recipe is jaw-droppingly delicious - it pretty much combines all my favourite foods in one meal! Even my non-vegan family enjoyed this when I made this for them and it's the perfect to make for a large group as it's so easy to simply make a larger batch. If you want to add extra veggies such as peas or broccoli to your pasta once you have added the sauce then feel free!


Ingredients (serves 1):

↝ 100g pasta, dry

↝ 1/2 large to medium sized avocado

↝ 1.5 handfuls spinach or basil

↝ 1/2 clove garlic

↝ juice of 1/2 a lemon

↝ 3-4 crushed brazil nuts

↝ 2tbsp unsweetened almond or cashew milk

↝ 2tbsp nutritional yeast


Method:

First, cook the pasta according to the instructions.


Prepare the other ingredients and add them all to a blender (I use a Vitamix blender).


Once a pesto-like consistency has been reached and all the ingredients have been blended, drain the pasta and pour the pesto on top.


Garnish with toppings of your choice, such as fresh cherry tomatoes or alfafa sprouts!
